Veggie Boxes Week 12 2024

This weeks veggies include:

carrots

swiss chard

zucchini/summer squash

potatoes

yellow slicing tomato

red slicing tomato

poblano pepper

banana pepper

bell pepper

onion

yellow beans

kobocha squash/acorn squash

butternut squash

romaine lettuce mix


The Grysen Growers Original recipe this week is

Casey's one pot rice and jalapeno cheddar skillet

(adapted from broccyourbody.com)


  • 2 tbsp olive oil

  • 5 or 6 jalapeno cheddar brats or jalapeno chicken sausage

  • 1 small yellow onion

  • 3 cloves of garlic minced

  • 1 poblano pepper seeded and diced

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp paprika

  • 1/2 tsp of oregano

  • 1 1/4 cups of white rice

  • 2 cups of chicken bone broth

  • 2 cups of shredded cheddar cheese

  • 1 cup of chopped swiss chard


Heat 1 tsp of olive oil in a large deep pan with a lid over medium high heat. Add the brats/sausage and cook for 2-3 minutes per side or until golden brown. Remove sausage and set aside.


Add the other tbsp of oil to the same pan and reduce heat to medium. Add the onion, garlic and poblano and stir until tender.


Add the seasonings and rice and stir to combine.


Add the chicken broth and bring the heat to high. Stir in the spinach and the cheese and add the sausage or brats back in the pan on top.


Once boiling, cover and reduce heat to low. Let it simmer for 20-25 minutes or until rice is tender and cooked. Let it sit covered for an extra 5-10 minutes to fully absorb flavors.


Serve hot and enjoy!
