Veggie Boxes Week 10 2024

This week's veggie boxes include:

carrots

beets

parsnips

eggplant

celery

kale

swiss chard

yellow slicing tomato

red slicing tomato

onion

zucchini or snack peppers

bell pepper

poblano pepper

cherry tomatoes

potatoes

The Grysen Growers original recipe this week is

Garlic carrots and parsnips

• 5 or 6 carrots peeled and sliced on a slant into 1/2 inch slices

• 4 or 5 parsnips peeled and sliced on a slant into 1/2 inch slices

• 2 tbsp of melted butter

• 3 cloves of garlic minced

• a sprinkle of garlic powder

• salt and pepper to taste

Preheat the oven to 400 degrees

Slice the carrots and parsnips and mince the garlic cloves

Place all ingredients into a mixing bowl and stir

Transfer to a parchment paper lined cookie sheet

Cook in the oven for 22-25 minutes or until desired softness

Enjoy!

We enjoyed them with roast and mashed potatoes.
