Veggie Boxes Week 7 2024

This weeks veggie boxes include

carrots

yukon gold potatoes

beets

lettuce mix

celery

swiss chard

zucchini/summer squash

2 eggplant

red slicing tomato

yellow slicing tomato

cherry tomato mix

kale

yellow bell pepper

beans


The Grysen Growers original recipe this week is


Casey's eggplant parmesan (adapted from loveandlemons)


2 medium to large egg plant

2 large eggs

1/4 cup of milk

2 slices of bread (blended into crumbs)

1 1/4 cups of parmesan cheese divided

2 tsp of oregano

2 tbsp of italian seasoning

1/4 tsp red pepper flakes

1/2 tsp salt (plus some for taste)

1/2 tsp pepper (plus some for taste)

olive oil

1 lb of ground beef or pork

28 ounces of marinara sauce

1/2 a log of fresh mozzarella

fresh basil for garnish



Preheat the oven to 400 degrees and line 2 baking sheets


In a medium sized dish mix, whisk the eggs and milk.


In another medium sized dish, combine the bread crumbs, 1 cup of parmesan, oregano, italian seasoning, red pepper flakes, salt and pepper.


Dip the eggplant slices into the egg mixture and then into the breadcrumb mixture. Place onto the baking sheets and drizzle with olive oil, bake for 19 minutes.


While baking brown your ground beef and add the marinara sauce.


In a 9x13 baking dish, spread 1/2 cup of marinara sauce mixture, layer half the eggplant, and top with 1 cup of marinara sauce mixture and half of the mozzarella. repeat with the remaining eggplant, the remaining marinara mixture and the remaining mozzarella.


Sprinkle with the remaining 1/4 cup of parmesan and drizzle with olive oil. sprinkle some salt and pepper to your liking.


Bake for 20 minutes or until cheese is melted.


Broil for a few minutes to get the cheese browned.


Remove from oven and serve with fresh basil if desired.


serve with your favorite bread! We made some french bread.
