Veggie Boxes Week 4 2024

This weeks veggie boxes include

kale

swiss chard

red skin potatoes

beets

celery

carrots

dill

cilantro

radishes

romaine heart

lettuce mix

zucchini/summer squash

The Grysen Growers original recipe this week is

Casey's fried zucchini

2 zucchini or summer squash

olive oil

salt

pepper

parmesan cheese

crushed red pepper (optional)

onions sliced (optional)

• cut zucchini or summer squash into 1/2 inch slices

• heat 1-2 tablespoons of olive oil in a pan

• add your zucchini or summer squash and slices onion and then season with salt and pepper to your liking

• let it fry for a few minutes and then flip to the other side and season that side as well

• once browned transfer to serving dish and top with fresh grated parmesan cheese and some crushed red pepper for a kick and garnish with fresh herbs if you would like.
